| Title: Technical solutions for herring processing and salting |
Abstract: A company from northwestern Poland specialising in production of marinated herring is looking for companies and research institutes that can provide it with the "Dutch maatje" technology, and safe conservation technologies. Sought forms of cooperation are license agreement and commercial agreement with technical assistance. |
Description: A company from northwestern Poland has been operating since 1992 and employs 120 workers. From its creation till now it has been specialising in marinated herring production. The processing plant is evaluated by the exterior auditors as the one of the most modern fish processing plant in Poland. Owing to HACCP (Hazard Analysis and Critical Control Point) system implementation the company ensures high quality of its assortment and has the rights to export its products to EU markets.
It mostly utilises Baltic herring for production of:
- Oil marinades
- Acetic marinades
- Sour-sweet marinades
- Spicy (root flavoured) marinades
- Marinades with dressings (tomato, vegetable, cream, mayonnaise)
with various additives such as: mushrooms, dried vegetables, pickled vegetables, candied fruits, other fish species (for example herring rollmops with smoked salmon).
The basic assortment constitutes hand-made herring rollmops and herring fillets with oil or acetic or sour-sweet marinades and dressings packed in glass and plastic packages (200g - 5 kg). Moreover the company produces cut fillets with marinades and dressings packed in plastic packages (550g - 3kg).
The company would like to improve current processes and implement new ones.
